Even in a world where intrinsic value could be objective, you're never going to have everyone agreeing on the exact amounts of value that each thing intrinsically provides. In theory, value could be objective but quantifying it is always going to be subjective, and if you agree with that then GFT applies to anything.

The issue is you're misinterpreting what the value GFT refers to is. Not maliciously or in bad faith, but it's still an error that's making your point untenable. GFT is literally defined as dealing with assets that have no "intrinsic value". Intrinsic value is not subjective. Some investments and assets have both intrinsic value (they are based in actual value beyond the subjective value a buyer ascribes to them, such as dividends/profit sharing, actual ownership of a company as is the case with many stocks etc.) AND subjective value (how much an individual is willing to pay to acquire said asset). By only understanding/interpreting value as the latter (via the incorrect statement that all value is subjective), that's where you're running into issues. GFT on the other hand, specifically refers to folks adopting a risky investment strategy of investing in assets which do not have intrinsic value (for example, "shitcoins") in a gamble on the hopes that someone down the line might be willing to pay more for said asset than they did. Which is a big difference than someone buying a dividend-paying stock, while also still hoping it will be worth more in the future to someone else. One of those is GFT, and one is not. And that is why your statement that such a definition could apply to "literally anything" is very incorrect.

You're talking about "Greater Fool Theory", which is definitely true with many other investments, but please don't think something like Google or Microsoft stock falls into these categories.
