If I am reading this correctly you have to wait until jan1-5th get your reward then have just couple days to commit for G2? Looks like these last staking rounds might end June 7, 2021 20:59 (SGT) but people will be still staked and it will slowly be released. I would think they would have more rounds if this is successful. It already looks to be having success.
No, you don't if you use a project like SharedStake. You can put any amount of your ETH into ETH2 staking but also take it out anytime you want. You get BOTH ETH2 rewards (when ETH2 is ready) AND SharedStake governance tokens, SGT, as rewards for staking. Its a killer project. There are only a few others like it where your ETH isn't completely staked & locked in ETH2

If you search for lido youll notice they dont run their own nodes at all, but instead centralize and hand it off to certus one which is even less control from the community.
